Ingredients
  • 400 grams almonds soaked and dehydrated (optional)
  • 400 grams pecans soaked and dehydrated (optional)
  • 200 grams sunflower seeds
  • 200 grams coconut flakes
  • 150 grams dried blueberries
  • 3 heaped tablespoons ghee
  • 1 tablespoon ground cinnamon
  • 60 grams raw honey

  1. Pre-heat oven to 190 degrees Celsius
  2. Chop almonds roughly either with a sharp knife or you can use a high powered food processor on medium speed and check after 3 seconds. Put almonds in a deep roasting tray.
  3. Chop pecan roughly with either a sharp knife or you can use a high powered food processor on medium speed and check after 2 seconds (pecans are softer in texture and don't take long to break down). Put pecans into roasting tray.
  4. Add sunflower seeds, ground cinnamon and stir to combine ingredients.
  5. Dollop the ghee over the mixture and put it oven
  6. Check after 5 minutes, as the ghee would have melted and give the mixture a good stir to mix the ghee through.
  7. Bake for 10 minutes and check and mix if any nuts are getting too brown.
  8. Bake for another 10 minutes if needed. Granola should be slightly golden in colour. Sprinkle coconut flakes over the top. DO NOT MIX!!! Bake for 3 minutes only (the coconut will burn if any longer).
  9. Give another mix and add your dried fruit and honey and mix until combined.
  10. Let cool to room temperature and scoop into a cereal container. Store in fridge
  11. Serve with your choice of milk, yoghurt or fresh fruit. The choice is yours!
Recipe Notes

A brilliant 'base' recipe for a granola. Nuts and seeds can easily be changed according to taste and diet restrictions. Dried blueberries could also be changed to sultanas, dried cranberries, chopped medjool dates etc.
I keep our granola, to keep it safe from the dreaded pantry weevils and it also creates a solid texture with the honey.
