Ingredients
  • 100 grams butter
  • 50 grams coconut flour
  • 1 tablespoon lemon rind
  • 2 tablespoon lemon juice
  • 50 grams honey
  • 1 egg

Instructions
  1. Preheat oven to 170 degrees celsius
  2. Line an oven tray with grease proof paper
  3. Melt butter in saucepan, remove from heat.
  4. Add remainder ingredients
  5. Using a tablespoon, scoop the mixture and roll lightly into balls
  6. Slightly squash the biscuit dough with the back of the spoon
  7. Bake for 10 minutes (check if biscuit is cooked by looking underneath them if brown)
  8. Let cool slightly before eating
Recipe Notes

I did find these biscuits a little on the sweet side. You could easily decrease the honey to 40 grams.

Ingredients
  • 500 gram pork mince preferably organic and/or grass fed
  • 40 gram courgette grated
  • 40 gram carrot grated
  • 1 tablespoon homemade vegetable paste from Thermomix basics cook book
  • 1 tsp dulse flakes (optional)
  • 1/4 cup sunflower seeds milled
  • 1 egg free range

  1. Grate carrot and courgette into a mixing bowl
  2. Add the rest of the ingredients and mix with wooden spoon until combined
  3. Roll into bite size balls and place on an oven tray covered in baking paper
  4. Bake in oven on 180 degrees Celsius for 20 minutes
  5. Serve warm or cold with salad of choice. For a bit of extra fun - toothpicks make an ideal companion!

This could easily be a stage 4 recipe if you removed the salad.

These raw balls are lunch box friendly and contain a small amount of protein from the seeds and naturally sweetened from the medjool dates. In warmer months keep them in the freezer and they will be slightly thawed when you want to eat them.

  • 60 gram papitas
  • 20 gram dessicated coconut
  • cacao powder to roll in

  1. Place all ingredients into a high powered blender
  2. Blend on high for 1 minute
  3. Scoop out 1tablespoon at a time and roll into ball with hands
  4. Pour a small amount of cacao powder into a bowl and roll the raw balls in it until fully covered.
  5. Store balls in the fridge or freezer and put the unused cacao powder into a sealed bag for later use
